I was worried about not being ready for Easter. Turns out I had time to chill before everyone showed up. That has never happened before. Usually, until the first car pulls up, I'm running around like a mad woman trying to finish straightening and checking on the food and running a comb through my hair. And Roy is crabby and complaining that I didn't get as much done as I should have and I'm telling him that if he had gotten up with me at 7 instead of at 10, he could have helped get a lot more done and to leave me alone. - But that didn't happen this year. He did sleep in, that happened, that's not going to change, I have figured that out. But he got a ton done Saturday night and since he was gone most of Saturday, I too, got a ton done without him or little boy right behind me asking for help or pulling out what I just got done fixing.
It was a good day. Not too hot, not too humid, nice breeze. We blew up the little pool but nobody swam. They did run down the battery on the quad and the fire truck. They crushed 12 dozen cascarones, blew up and let loose balloons Grandma had brought. And played guns. What more could you ask for in a South Texas Easter?
There was way too much food. I was hoping not to do that this year but it gets away from me. The only thing I didn't have a lot of leftovers on was the ham. My mac n cheese was not up to par - second year in a row. I found and tried a recipe for slow cooker mac n cheese - tried it on my boys - it turned out great. So I added it to the Easter recipe collection. I did so because I usually was making the rue for the cheese sauce while the easter egg hunt was going on. I didn't want to miss that. So for two years in a row, I have attempted the same recipe and both times - FAIL. Next year, I will make this right. The ham rocked. And the green beans were fab. The salami, cheeses, fruit salad, and the candy hit the spot. I don't believe anyone went hungry.
Auntie Sandra brought 380-some eggs. It took the kids about 20 minutes to find them all. Since the chocolate was soft, we emptied the eggs onto the ice in the cooler and at the end of the day separated it out into bags for the kids. With the huge amount of candy in the bowl left at my house, I'm really glad the Easter Bunny brought Sy the basket with the army toys and just a few small snack bags of candy. I think we are set until Halloween.
