New Recipe

I tried a new recipe tonight. I got it from the Pillsbury cookbook my dad gave me a few years ago. I have tried about 6 other recipes out this same cookbook and they have all turned out really good and were very easy to make. There wasn't much I would modify if I was going to make any of them again.

The good news, this recipe held up to the easy and good test. It was Thai Chicken Salad. Ingredients:
2.5 cups of shredded chicken
1/3 cup of finely chopped scallions
1/3 cup of finely chopped red or yellow pepper
1/3 cup of Thai peanut sauce
1/3 cup of mayo
Mix all of these together in a bowl, cover and chill

1 package of refrigerated pie crust
roll it out cut into squares
bake until brown 425 degrees - about 10 minutes
you need to do both crusts in order to have enough for all the salad
1 tbsp of butter melted
1 tsp of hot oil
put the hot oil into the melted butter when the pie crust comes out the oven - you brush the butter mixture onto the squares and then let them cool.

You are supposed to put a tsp of the salad onto the squares after they are cool and serve

This would be a great appetizer for a party. It makes quite a bit and it's really good.

What I would change if I make it again...because we had this as dinner
I added cashews right before we ate. I liked the extra crunch.
I think I would cut up lettuce and tomatoes and add them to the salad and then cut up the crust into thinner strips and set those on top of the salad when served.

We decided it would make a good sandwich mixture too.

I served grapes with this. They were really cold and sweet. It was a nice compliment to the heat of the hot oil and peanut sauce.

I was glad to find a good recipe that was quick and easy - it makes my turn to cook more tolerable. And Roy is glad we didn't have spaghetti.
